Bramble Leaves – These are abundant around the countryside, and although the thorns can pose a problem, the leaves themselves are a much-loved treat at this time of the year, when the leaves are young. Make them into a tea which is useful for soothing a sore throat.

Mallow – The flowers themselves may not be in bloom yet, but the tasty leaves can be, and are high in vitamins and also can be medicinal, especially for digestive upsets. When the flowers arrive later in the year, they too can be added to salads and eaten.

Hairy Bittercress – This is often considered to be a weed if it pops up in the garden, but to the forager, this is a delicious treat! It has a lovely peppery taste and can be used in salads, and in replacement of cress, such as in an egg sandwich for example.

As it is a plant that grows close to the ground, make sure that you wash it well before eating.

Wild Garlic – A favourite of foragers, find this by following the distinctive smell. It grows in shady areas, so the woodlands are a perfect place to look for this delicious plant.
